<li>Die Quitten, waschen, schälen, entkernen und etwas kleiner schneiden. Es sollten mindesten 3 kg Fruchtfleisch ergeben. </li>
<li>Die Quitte mit Hilfe einer Küchenmaschine klein hexeln und in einem großen Topf mit Gelierzucker vermengen. </li>
<li>Für ca. 15 Minuten stehen lassen und mit dem Zitronensaft zum kochen bringen. </li>
<li>Bekommt die Marmelade eine flüssige Konsistenz, nimmt man einen Stabmixer und püriert auf die gewünschte Konsistenz. </li>
<li>Die Marmelade wird jetzt für 5 Minuten wallen kochen gelassen und rührt dabei gut um damit es nicht anbrennt. </li>
<li>In sterile, vorbereitete Gläser heiß abfüllen und sofort verschließen. </li>

<li>Die vorbereitete Weichseln mit Gelierzucker anrühren und für 30 Minuten im Topf ziehen lassen. </li>
<li>Restliche Zutaten dazugeben und zum kochen bringen. </li>
<li>Mit einem Stabmixer auf die gewünschte Größe zermixen und für ca. 5 Minuten wallend kochen lassen. </li>
<li>Die noch kochende, heiße Marmelade in saubere und sterile Gläser abfüllen und heiß sofort verschließen. </li>
<li>Erkaltet dunkel lagern.</li>

<li>Backrohr auf 100 °C vorheizen.</li>
<li>Die Marmeladegläser gut auswaschen und im Backrohr einstellen zum sterilisieren. Die Deckel heiß und sauber abwaschen und bereitlegen. </li>
<li>Beeren, Zitrone und Quittin mit einem Stabmixer bearbeiten bis der Fruchtsaft austritt. Zum Kochen bringen und erst dann den Zucker und die gehackte Schokolade einrühren. </li>
<li>Alles aufkochen und für ca. 5 Minuten gut sprudelnd kochen lassen. </li>
<li>Nach Wunsch jetzt heiß durch ein Sieb passieren und sofort in die heißen Gläser abfüllen und noch heiß verschließen. </li>
<li>Erkalten lassen.</li>

<li>Die Marmeladegläser gut auswaschen und im Backrohr einstellen zum sterilisieren. Die Deckel heiß und sauber abwaschen und bereitlegen. </li>
<li>Die vorbereiteten Kirschen, Zitrone und dem Quittin (laut Anleitung) mit einem Stabmixer pürieren und zum Kochen bringen. </li>
<li>Erst jetzt den Zucker und Zimt einrühren und ca. 5 Minuten sprudelnd kochen lassen. Jetzt kann man noch einmal die Marmelade mixen wenn man sie feiner haben möchte. </li>
<li>Die heißen Gläser aus dem Ofen nehmen und mit einem Messbecher vorsichtig die Marmelade heiß abfüllen. </li>
<li>Sofort heiß verschließen und so abkühlen lassen. </li>

<li>Die Marmeladegläser gut auswaschen und im Backrohr einstellen zum sterilisieren. Die Deckel heiß und sauber abwaschen und bereitlegen. </li>
<li>Alles in einem Topf geben und mit einem Stabmixer bearbeiten bis der Fruchtsaft austritt. </li>
<li>Alles aufkochen und für ca. 5 Minuten gut sprudelnd kochen lassen. </li>
<li>Nach Wunsch jetzt heiß durch ein Sieb passieren und sofort in die heißen Gläser abfüllen und noch heiß verschließen. </li>
<li>Erkalten lasse.</li>

<li>Leere Marmeladengläser gut auswaschen und ins Backrohr bei 100 °C sterilisieren. </li>
<li>Die Hälfte vom Kristallzucker in einem Topf zum hellen Karamell schmelzen und mit Schnaps ablöschen.</li>
<li>Mit dem Wasser aufgießen, restliche Zutaten wie Nelken, Zimt, Vanillezucker, Zitronensäure, restlicher Zucker und Gelierzucker einrühren und einmal aufkochen lassen. </li>
<li>Kocht der Sud, die entkernten Kirschen einlegen, auf halbe Leistung zurückdrehen und zugedeckt gut durchziehen lassen. Bestenfalls soll es nicht stark kochen weil sonst die Früchte zerkochen. </li>
<li>Die sterilen Gläser aus dem Ofen herausstellen, die weichen aber noch bissfesten Kirsche herausschöpfen und in die Gläser vorsichtig umfüllen. Gläser mit Kirschen so voll füllen das 2 Fingerdick Platz noch bleibt. </li>
<li>Den übrig gebliebenen Sud noch einmal stark aufkochen und heiß über die Kirschen in die Gläser vollfüllen. Mit den Deckel gut verschließen. </li>
<li>Gläser auf den Kopfstellen damit die Flüssigkeit überall hinkommt und die Luftblasen an die Oberfläche steigen. </li>
<li>Sind die Gläser erkaltet, wieder retour drehen und dunkel und kühl lagern. </li>

<li>Zucker und Wasser in einen großen Topf geben und auf höchste Stufe einschalten. Die Mandeln dazugeben und bei ständigen rühren beginnen zu karamellisieren. </li>
<li>Hat der Zucker den gewünschten Farbton und umhüllt alle Mandeln, wird es auf ein Backpapier geleert und lässt es abkühlen. </li>
<li>Krokant zerbrechen und in einen Mixer mit einem starkem Messer geben. Vorsichtig und solange mixen bis es cremig wird und man die gewünschte Konsistenz bekommt. </li>
<li>Zum Schluss wird das Salz und der Kakao eingemixt. In saubere und sterile Gläser abfüllen. </li>

<li>Im Backrohr bei 100°C die ausgewaschenen Marmelade Gläser einschieben um sie so steril zu bekommen. </li>
<li>Die Beeren mit Hilfe einer flotten Lotte passieren oder mit einem Entsafter den Saft daraus gewinnen. Den daraus gewonnenen Saft (1,7 kg) mit Zucker, Vanille und Zitrone zum Kochen bringen und solange wallend kochen lassen wie es auf der Anleitung des Gelierzucker steht. </li>
<li>Die heißen Gläser bereitstellen, das fertig gekochte Gelee mit Hilfe eines Messbechers in die Gläser abfüllen und noch heiß, luftdickt verschließen und so erkalten lasse. </li>
