<li>Für den Brioche wird die Milch leicht erwärmt, der Zucker darin aufgelöst und die Germ eingerührt. Mit ca. 100 g Mehl zu einem dünnen Vorteig vermengen und abgedeckt an einem warmen Ort rasten lasse.</li>
<li>Der Vorteig hat sein Volumen verdoppelt und wird mit den restlichen Zutaten zu einem glatten Teig verknetet. Diesen nochmals rasten lassen.</li>
<li>Hat er sich verdoppelt, zusammenschlagen, auf 40&#215;40 cm ausrollen und Nougat darauf gleichmäßig verstreichen. Mit Zimt vorsichtig bestreuen, die Beerenmischung darüber gleichmäßig verteilen, einrollen wie eine Schnecken und der Länge nach durchschneiden. Die 2 Teile in sich verflechten und vorsichtig in die ausgefettete Form legen und abgedeckt rasten lassen. </li>
<li>Bei 170 Grad Celsius die Babka für ca. 40 Minuten gut backen. </li>

<li>Eine breite Pfanne bis zur Hälfte mit Wasser füllen und auf 80°C erwärmen. </li>
<li>Eiklar, Salz, Zucker und Vanille gut steif schlagen. Etwas Eischnee auf eine Teigkarte geben und mit Hilfe einer Palette oder Messer diesen Schnee zu einem Dreieck, einem Nockerl formen. Vorsichtig von der Teigkarte ins Wasser gleiten lassen. </li>
<li>Jedes Nockerl muss pro Seite ca. 5 Minuten ziehen (Wasser darf nicht kochen). Vorsichtig mit einem Pfannenwender umdrehen und die anderen Seiten garen lassen. </li>
<li>Die Fruchtsauce und die Beeren auf einem Teller schon einmal schön anrichten, das Nockerl herausheben, sofort anrichten und servieren. </li>
