<li>Backrohr auf 180° C vorheizen.</li>
<li>Blüten so sauber wie möglich vom Grün schneiden. </li>
<li>Dotter, Milch, Mehl und die Blüten glatt verrühren. Eiweiß, Zucker, Salz und Vanillezucker cremig schlagen. Vorsichtig unterheben und in eine heiße beschichtete Pfanne gießen. Die Pfanne ins Rohr für ca. 15 &#8211; 20 Minuten schieben.</li>
<li>Nach der Backzeit, Masse soll gestockt sein und nicht teigig, die Pfanne aus dem Rohr nehmen und auf die Herdplatte bei mittlerer Hitze stellen.</li>
<li>Den Schmarren in 4 Teile schneiden, mit Hilfe eines Pfannenwender die Teile umdrehen und zerreißen. 1 Handvoll Zucker darüber streuen, Schmarren karamellisieren lassen.</li>
<li>Anzuckern und servieren. Erdbeersauce oder Erdbeerröster würden perfekt dazu passen. </li>

<li>Backrohr auf 190 °C vorheizen.</li>
<li>Den Blätterteig in 2 cm lange Streifen schneiden (je Teig 20 Stk.) und gleichmäßig auf die Schaumrollenformen versetzt aufwickeln.</li>
<li>Solange im Rohr backen bis der Blätterteig eine schöne goldbraune Farbe bekommt.</li>
<li>Aus dem Rohr nehmen, für 1 Minute stehen lassen und noch heiß vorsichtig von den Rollen lösen.</li>
<li>Für den Schnee wird Eiweiß mit Staubzucker aufgeschlagen bis er schmierig fest wird.</li>
<li>Nebenbei kocht man den Zucker mit Wasser auf 119°C und lässt ihn nach erreichen der Grade langsam in den noch schlagenden Schnee einlaufen.</li>
<li>Die Fülle solange weiterschlagen bis sie etwas kühler wird. Zum Schluss den gesiebten Kakao flott, nicht zu lange einrühren, in einen Dressiersack füllen und die erkalteten Schaumrollen damit befüllen.</li>
<li>Vor dem servieren mit Staubzucker anstauben.</li>

<li>Für den Schnee wird Eiweiß mit Staubzucker aufgeschlagen bis er schmierig fest wird.</li>
<li>Nebenbei kocht man den Zucker mit Wasser auf 119°C und lässt ihn nach erreichen der Grade langsam in den noch schlagenden Schnee einlaufen.</li>
<li>Die Fülle solange weiterschlagen bis sie etwas kühler wird, in einen Dressiersack füllen und die erkalteten Schaumrollen damit befüllen.</li>
<li>Vor dem servieren mit Staubzucker anstauben.</li>

<li>Für den Belag wird Butter geschmolzen und mit Zucker, Zimt und Zitrone miteinander verrührt. Auf der Seite abkühlen lassen bis es weiter verarbeitet wird. </li>
<li>für den Teig Wasser und Kondensmilch fingerwarm erwärmen. Die Germ darin auflösen und soviel Mehl einarbeiten das es eine dickbreiige Konsistenz bekommt. Abgedeckt ca. 1 Stunde rasten lassen. </li>
<li>Hat sich das Volumen verdoppelt, knetet man die restlichen Zutaten zum Dampfel bis es ein glatter Teig entsteht. Diesen Teig abgedeckt wieder 1 Stunde rasten lassen bis er sich verdoppelt. </li>
<li>Auf einer bemehlten Arbeitsfläche den Teig auf ca. 70&#215;40 cm gleichmäßig ausrollen und den vorbereiteten Belage darauf verteilen. Die Rumrosinen gleichmäßig darüberstreuen und der Länge nach eng zu einer Schnecke aufrollen. </li>
<li>Die Schnecke in 8 gleiche Teile portionieren und in eine ausgefettete Form einschlichten und abgedeckt wieder solange rasten lassen bis sich das Volumen vergrößert. </li>
<li>Im vorgeheiztem Rohr bei 190°C für ca. 40 Minuten backen </li>

<li>Die Semmelbrösel im Rohr bei 180°C solange rösten bis sie eine goldbraune Farbe erhalten. In der Zwischenzeit wird die Butter geschmolzen bis sie eine goldbraune Farbe annimmt. Mit den fertig gerösteten Brösel abgemischt und beiseite gestellt. </li>
<li>Einen Topf mit Salzwasser für die Knödel vorbereiten und einschalten. </li>
<li>Die fertig gekochten Erdäpfel werden heiß geschält, etwas Ausdampfen lassen und noch warm durch die Presse gedrückt. Mit den restlichen Zutaten wird es rasch aber nicht zu lange zu einem Teig verknetet. </li>
<li>Auf einer bemehlten Arbeitsfläche wird der Teig zu einer gleichmäßigen Rolle geformt und daraus 10 Stücke portioniert. </li>
<li>Der Kern wird aus den Marillen entfernt und durch ein Stück Marzipan ersetzt. Je 1 Marille wird mit einer Portion Erdäpfelteig umhüllt. </li>
<li>Die Knödel vorsichtig in das wallende Wasser reingleiten lassen und zugedeckt ziehen lassen. Wasser darf nicht stark kochen, nur wallen. </li>
<li>Schwimmen die Knödel an der Oberfläche, lässt man sie ca. 5 Minuten noch garen, fischt sie heraus und sogleich in die bereit gestellten Brösel gewendet. </li>
<li>Heiß mit Staubzucker servieren und genießen. </li>

<li>Backrohr auf 180 °C vorheizen. Die Semmelbrösel auf einem Blech verteilen und goldbraun rösten. Die Butter in einem Topf zum Schmelzen bringen bis sie eine leicht bräunliche Farbe annimmt und zur Nussbutter wird. Geröstete Brösel in ein Geschirr umleeren, den Zimt mit einem Schneebesen unterrühren und die flüssige Butter einmengen. </li>
<li>Die gekochten Erdäpfel Schälen und etwas ausdampfen lassen. Alle anderen Zutaten für den Teig abwiegen und vorbereiten. Die Erdäpfel noch warm pressen und daraus einen Teig herstellen. Nicht zu lange kneten, das schadet dem Teig.</li>
<li>Auf einer bemehlten Arbeitsplatte ca. 1-2 mm dick ausrollen, Scheiben mit 7 cm Durchmesser ausstechen, eine Hälfte der Scheiben zart mit Wasser benetzen, ins Zentrum eine ca. nussgroße Portion Powidl platzieren und die Tascherl verschließen. </li>
<li>Gut an den Rändern angedrückt werden sie im wallendem Salzwasser gegart. Aufpassen, nicht zu viele einlegen, sie quellen im Wasser aus. Schwimmen sie an der Oberfläche, ca. 5 Minuten noch schwimmen lassen. </li>
<li>Aus dem Wasser fischen, in den Butterbrösel wenden und mit Staubzucker zu Tisch bringen. </li>

<li>Brösel im Rohr bei ca. 190°C goldbraun rösten. Die Butter in einem Topf geben und leicht köcheln lassen bis sie leicht nussfarben wird. Die fertig gerösteten Brösel in die Butter einrühren und beiseite stellen.</li>
<li>Für den Teig wird Wasser, Butter und Salz zum Kochen gebracht. Das Mehl mit einem Kochlöffel einarbeiten und solange abrösten bis sich am Topfboden ein weißer Film bildet. In eine Schüssel umleeren und die Eier mit einem Mixer einarbeiten. </li>
<li>Auf einer bemehlten Arbeitsfläche den Teich auf ca. 1-2 mm Stärke ausrollen und mit einem runden Ausstecher (7cm) Kreise ausstechen. </li>
<li>Powidl mit Rum abschmecken.</li>
<li>Eine Hälfte der Scheiben zart mit Wasser benetzten und Mittig mit einem halben Kaffeelöffel Powidl platzieren. Zu Tascherl falten, andrücken und in leicht wallendem Salzwasser ziehen lassen. </li>
<li>Schwimmen sie an der Oberfläche, nochmal 5 Minuten im Wasser lassen und dann direkt in den Butterbrösel wenden und mit Staubzucker servieren. </li>

<li>Die Äpfel groß reiben und mit den restlichen Zutaten, aber ohne Backpulver, gut vermengen. Je nach Feuchtigkeit der Äpfel ist die Mehlzufuhr steuerbar. Es soll eine mit dem Löffel formbare Masse sein. Die Masse im Kühlschrank ca. 3 Minuten ziehen lassen. </li>
<li>Einen Topf mit Wasser bereit stellen und zum köcheln bringen. </li>
<li>Die Nockerlmasse herausnehmen, einmal gut durchrühren, das Backpulver einmengen und sofort verarbeiten. </li>
<li>Das Kochwasser salzen. Einen Esslöffel ins heiße Wasser eintauchen und aus den Masse Nockerl stechen und vorsichtig ins Wasser gleiten lassen. Nicht zu viele Nockerl in den Topf geben, sie Quellen auf. Mit einem Deckel ziehen lassen bis sie an die Oberfläche kommen und ohne Deckel nochmal ca. 5 Minuten ziehen lassen. </li>
<li>Mit flüssiger warmer Butter und Mohn zu Tisch bringen und bei Bedarf anzuckern. Apfelmousse oder Apfelkompott passen super dazu. </li>

<li>Butter mit Zucker, Salz und dem Ei schaumig schlagen. Den Grieß einlaufen lassen, den Topfen einrühren und zum Schluss das Mehl einmengen. </li>
<li>Zugedeckt für ca. 30 Minuten im Kühlschrank rasten lassen. Einen Topf mit Wasser bereitstellen. </li>
<li>Die Brösel auf einem Backblech verteilen und im Rohr für 180°C goldbraun rösten. Die Butter in einem Topf schmelzen und solange leicht köcheln lassen bis die Butter zu einer Nussbutter wird. Bekommt die Butter eine Nussig braune Farbe stellt man sie zur Seite. Zucker mit den fertig gerösteten Brösel durchmischen und die flüssige Butter gleichmäßig einrühren. </li>
<li>Ins leicht wallende Wasser etwas Salz geben und aus der Knödelmasse ca. 50 g Portionen auswiegen und zu Knödel formen. Knödel einlegen und mit Deckel Ziehen lassen bis sie an der Oberfläche schwimmen. Deckel entfernen und für weitere ca. 5 Minuten fertig garen, aus dem Wasser fischen und in den Brösel wenden. Heiß servieren und bei bedarf anzuckern. Diverse Kompotte, Fruchtsaucen oder Ragout kann man dazu reichen. </li>

<li>Backrohr auf 180 °C.</li>
<li>Die Eier mit Zucker schaumig schlagen und das gesiebte Mehl mit der flüssigen Butter flott aber vorsichtig unterheben. In einen Tortenreifen (24 cm) füllen und gleichmäßig verteilen. Im Rohr goldgelb backen und den Boden ganz erkalten lassen.</li>
<li>Für die Creme wird ein Teil der Milch mit Dotter und Puddingpulver verrührt. Restliche Milch mit Zucker und Vanilleschote zum Kochen bringen und die Dottermilch einrühren. Gut abkochen bis sich ein fester Pudding ergibt. Umleeren und mit Folie direkt am Pudding abgedeckt auskühlen lassen.</li>
<li>Für die Tränke wird das Wasser mit dem Zucker zum kochen gebracht, beiseite geschoben und mit Rum abgeschmeckt.</li>
<li>Das Obers für das Mousse cremig aufschlagen. Gelatine im kalten Wasser einweichen, die gerösteten Mandelblättchen in den Händen zerkleinern, kann ruhig ungleichmäßig groß sein und den Rum erwärmen. Die Gelatine ausdrücken und im warmen Rum auflösen. Den Pudding und Zucker mit dem Handmixer gut glatt rühren, sollen keine Stücke darin sein. Rum-Gelatine in den Pudding einrühren und sofort die Mandeln mit dem Obers unterheben.</li>
<li>Den Biskuitboden mit etwas Tränke befeuchten und die Hälfte der Creme darauf verteilen. Biskotten in der Tränke eintauchen und auf die Creme aufreihen. Den Rest der Creme darauf verstreichen und mit einer weiteren Schicht getränkter Biskotten abschließen. Leicht andrücken und mit Folie bedeckt im Kühlschrank durchkühlen lassen. Am besten über den Tag.</li>
<li>Um die Torte ausfertigen zu können schlägt man das Obers cremig steif auf. Die Torte aus dem Reifen befreien und mit dem Obers einsteichen. Am Rand werden die Mandelblättchen angedrückt und mit einem Dressiersack auf der Oberfläche Rosetten dressiert. Mit schräg geschnittenen Biskotten ausdekorieren und servieren.</li>
