<li>Den frischen Mandarinensaft einmal gut aufkochen und auf der Seite auf Körpertemperatur herabkühlen lassen. Ungefähr 1/3 Mehl und Trockengerm gut miteinander vermischen und mit dem lauwarmen Saft zu einen Dampfl vermischen. An einem warmen Ort abgedeckt rasten lassen. </li>
<li>Hat sich das Volumen verdoppelt, kommen alle anderen Zutaten für den Teig bei Zimmertemperatur dazu und alles zu einem glatten Teig verknetet. </li>
<li>Aus diesem Teig ca. 55 g Stücke portionieren und zu glatten Kugeln schleifen. Abgedeckt kurz rasten lassen. Auf einem Blech wird ein sauberes Tuch aufgelegt und dieses reichlich mit Mehl bestauben. </li>
<li>Teiglinge mit Hilfe der Handinnenfläche zu einem Ei formen. Diese Eier auf das Tuch legen und abgedeckt das letzte mal rasten lasse. </li>
<li>Reichlich Pflanzenöl in einem Topf auf 170°C-180°C erhitzen und vorsichtig die Eier darin einlegen und mit dem Deckel verschließen. </li>
<li>Deckel entfernen und die Eier auf der 2. Seite ebenso goldbraun backen. </li>
<li>Marmelade mit etwas Rum zum kochen bringen. Die fertigen Eier damit einpinseln und im Kokosette wälzen.</li>

<li>Die Milch leicht erwärmen und die Germ darin auflösen mit dem Zucker. In einer Schüssel mit 60 g Mehl zu einem Dampfl verrühren und zugedeckt rasten lassen bis sich das Volumen verdreifacht.</li>
<li>Das Dampfl mit den restlichen Zutaten zu einem glatten Teig verkneten und nochmals rasten lassen für ca. 30 Minuten.</li>
<li>Zusammenkneten und soweit ausrollen das der Schinken darauf Platz hat und man ihm einpacken kann mit dem Teig. Mit dem Teigschluss aufs Blech umdrehen und nochmals ein paar Minuten rasten lassen. Ofen auf 170 °C vorheizen.</li>
<li>Briocheteig mit versprudeltem Ei bestreichen und für ca. 35 Minuten backen.</li>

<li>Dotter mit Zimt, Nelke und Schale schaumig schlagen, Eiweiß mit Zucker und Salz schmierig aufschlagen.</li>
<li>Die schaumige Dottermasse wird mit den Karotten gut vermengt, Eiweiß vorsichtig unterheben und die restlichen Zutaten gut einmengen.</li>
<li>In einen Tortenreifen füllen und für ca. 40 Minuten backen.</li>
<li>Nach dem erkalten wird die Torte mit heißer Ribiselmarmelade dünn eingestrichen, die Oberfläche der Torte wird mit weißem Fondant glasiert und der Rand mit gehobelten Mandeln eingestreut.</li>
<li>Mit Marzipankarotten dekorieren und servieren.</li>

<li>Das Mehl und die weiche Butter in einer Schüssel bereitstellen, die Milch erwärmen und darin die Germ auflösen. Zucker, Ei und Salz zum Mehl geben und alles zu einem glatten Teig verkneten.</li>
<li>Abgedeckt für ca. 30 Minuten rasten lassen, Teig soll sich verdoppeln. Das Backrohr auf 190°C vorheizen.</li>
<li>Nochmals zusammenkneten (wenn Teig zu weich ist, noch etwas Mehl hinzufügen), in 100 g Stücke Portionieren und den Restteig beiseite legen.</li>
<li>Um die Hasen zu formen nimmt man eine Portion, formt eine 35 cm lange Stange die sich zum Ende verjüngt. Die Stange zu einem U-formen, die rechte Hand hält die Oberen Spitzen fest und die linke dreht den unteren Teil um 360° sodass 2 Windungen entstehen. Jetzt sollte es aussehen, das der Unterteil der Körper ist und der Oberteil die Ohren.</li>
<li>Auf Blech wegsetzten, mit versprudeltem Ei bestreichen und aus dem Restteig 10 gleiche Teile portionieren, zu Kugel formen, in Kristallzucker wälzen und als Schwänzen dem Hasen auf dem Körper andrücken.</li>
<li>Im Rohr backen für ca. 15 Minuten.</li>

<li>Backrohr auf 180 °C vorheizen. Lammformen mit Butter ausfetten und mit Zucker ausstreuen.</li>
<li>Eier in Klar und Dotter trennen. Butter mit Zimt, Vanillezucker und Dotter schaumig schlagen. Eiklar mit Zucker und Salz cremig schlagen.</li>
<li>Dottermasse mit Eiweißmasse vorsichtig vermengen und das Mehl unterheben.</li>
<li>Die vorbereitete Lammformen füllen bis max. 1 Fingerhoch zum Rand der Form.</li>
<li>Im Rohr backen aber dabei aufpassen das die Lämmer und nicht das Blech, genau in der Mitte des Backofen stehen.</li>
<li>Heraus nehmen etwas überkühlen lassen, dann umdrehen und nochmals ca. 5 Minuten rasten lassen. Vorsichtig aus der Form lösen und bei Bedarf mit Staubzucker anzuckern.</li>
