<li>Holundersaft, Öl, Wasser mit Salz zum Kochen bringen und das Mehl mit einem Kochlöffel einrühren. Den Teig solange umrühren und abbrennen bis sich der Teig vom Geschirrrand löst und einen weißen Teigfilm hinterlässt. </li>
<li>Teig in eine Schüssel geben und das Ei mit den Blüten rasch mit einem Handmixer einarbeiten. </li>
<li>Das Öl in einem Topf auf ca. 170°C-180°C erhitzen und mit einem kurz im Öl eingetauchten Kaffeelöffel kleine Nockerl aus dem Teig stechen. </li>
<li>Nockerl langsam goldgelb herausbacken, aus dem Öl fischen und im Kristallzucker oder Staubzucker wenden. </li>
<li>Mit einer Erdbeersauce oder Erdbeerragout kann man die heißen Nockerl servieren.</li>

<li>Backrohr auf 190 °C vorheizen.</li>
<li>Den Blätterteig in 2 cm lange Streifen schneiden (je Teig 20 Stk.) und gleichmäßig auf die Schaumrollenformen versetzt aufwickeln.</li>
<li>Solange im Rohr backen bis der Blätterteig eine schöne goldbraune Farbe bekommt.</li>
<li>Aus dem Rohr nehmen, für 1 Minute stehen lassen und noch heiß vorsichtig von den Rollen lösen.</li>
<li>Für den Schnee wird Eiweiß mit Staubzucker aufgeschlagen bis er schmierig fest wird.</li>
<li>Nebenbei kocht man den Zucker mit Wasser auf 119°C und lässt ihn nach erreichen der Grade langsam in den noch schlagenden Schnee einlaufen.</li>
<li>Die Fülle solange weiterschlagen bis sie etwas kühler wird. Zum Schluss den gesiebten Kakao flott, nicht zu lange einrühren, in einen Dressiersack füllen und die erkalteten Schaumrollen damit befüllen.</li>
<li>Vor dem servieren mit Staubzucker anstauben.</li>

<li>Backrohr auf 180 °C vorheizen.</li>
<li>Blätterteige ausbacken und mit Hilfe eines Pizzaschneider ca. 0,5 cm dicke Streifen schneiden. </li>
<li>Je 1 Streifen auf eine Mini Form so aufrollen das sich der Teig leicht überlappt. Wichtig ist hier, das Anfang und Ende des Teiges dann auf der Backblechseite liegt. </li>
<li>Auf ein Backblech welches mit Backpapier ausgelegt wurde aufreihen und fingerbreit Platz zwischen den Rollen lassen. </li>
<li>Ins Rohr einschieben und solange backen bis der Teig schön aufblättert und eine gute braune Farbe bekommt. Je nach Blätterteig ist die Backzeit unterschiedlich. </li>
<li>Die fertig gebackenen Rollen aus dem Rohr nehmen und für 5 Minuten Überkühlen lassen. WICHTIG! Die Formen müssen noch im warmen Zustand, solange Fett warm/flüssig ist, gelöst werden. </li>
<li>Für die Fülle Wird Eiweiß mit 1/3 des Zuckers zu Schnee geschlagen. Der restliche Zucker wird mit 1 EL Wasser zum Kettenflug (119°C) gekocht und noch heiss im dünnen Strahl in das noch schlagende Eiweiß eingearbeitet. Der Schnee wird dadurch dicker und &#8222;lagerbarer&#8220;.</li>
<li>Die Fülle muss dann mit Hilfe eines Dressiersack in die Rollen gespritzt werden. </li>
<li>Gefüllte Schaumrollen noch anzuckern und am selben Tag servieren. </li>

<li>Dotter mit ein wenig Wasser verrühren, die Kekse damit bestreichen, in den Mandelhobel, welche ein wenig gröber zerkleinert wurden, leicht andrücken, aufs Backblech wegsetzten und backen.</li>
<li>Mit Staubzucker servieren.</li>

<li>Rotwein und Milch vorsichtig erwärmen. Den Zucker und die Germ darin auflösen und mit den restlichen Zutaten zu einem Teig verarbeiten. </li>
<li>Abgedeckt ca. 30 Minuten rasten lassen, zusammenkneten und nochmal 30 Minuten rasten lassen. </li>
<li>Teig glatt kneten, bei Bedarf ein wenig Mehl einarbeiten und auf die bemehlte Arbeitsfläche geben. </li>
<li>Teig auf ca. 45&#215;55 cm ausrollen, dabei die Tischfläche gut mit Mehl stauben. </li>
<li>Marmelade gleichmäßig darauf verstreichen und eng zu einer Stange aufrollen. Daraus 18 gleichgroße Stücke teilen und in die ausgefettete Backform einlegen. Abdecken und aufs doppelte Volumen aufgehen lasse. </li>
<li>Backrohr auf 180° C vorheizen und die Schnecken für ungefähr 30 Minuten backen lasse. </li>
<li>Warm können die Schnecken mit einer Vanillesauce serviert werden oder erkaltet mit Staubzucker zum Kaffee servieren. </li>

<li>Bananen, Rum, Vanille, Zucker, geriebene Tonkabohne, Öl und Salz fein mit dem Stabmixer pürieren. Mehl, Kakao und Backpulver versieben, in das Püree hineinmengen und gleich in 12 Muffins Formen, die mit Kapseln ausgelegt sind, abfüllen. Die Banane in 12 Stücke schneiden, in jeden Muffin bis zur Mitte eine hineindrücken und mit gehackter Schokolade bestreuen. </li>
<li>Für ca. 35 Minuten backen, herausnehmen und erkaltet genießen. </li>

<li>Milch leicht erwärmen aber nicht kochen lassen. Den Zucker darin auflösen und die Germ einrühren. Mit 100 g Mehl zu einem dickbreiigen Teig verarbeiten. Mit etwas Mehl bestauben und abgedeckt an einem warmen Ort rasten lassen.</li>
<li>Dotter, Rum, Salz und Vanille schaumig schlagen und das Öl langsam einlaufen lassen.</li>
<li>Hat das Dampfl an der Mehloberfläche Risse bekommen und das Volumen hat sich vergrößert, wird der schaumige Dotter und das restliche Mehl dazu geknetet bis es einen glatten Teig ergibt. Wieder abgedeckt an einem warmen Ort rasten lassen.</li>
<li>Das Volumen hat sich verdoppelt, nochmal zusammenkneten und aus dem Teig 40 g Stücke auswiegen und diese zu glatten Kugeln schleifen. Auf einem gut bemehltem Tuch wegsetzten, leicht anstauben, mit einem weiteren Tuch abdecken und mit einem 2. Blech flachdrücken. Das letzte mal an einem warmen Ort rasten lassen.</li>
<li>Das Öl in einem Topf auf 170°C erhitzen.</li>
<li>Die Krapfen mit der glatten oberen Hautseite zuerst ins Öl einlegen und den Deckel vom Topf darauf und 1 Minute verschlossen halten. Deckel abnehmen und wenn der Krapfen eine schöne Farbe bekommen hat wenden und die 2. Seite schön braun backen lassen.</li>
<li>Auf einem Gitter abtropfen lassen und wenn gewollt, noch heiß in Feinkristallzucker wenden, oder etwas überkühlen lassen und dann mit der gewünschten Fülle befüllen.</li>
<li>Zum servieren mit Staubzucker besieben.</li>

<li>Eiweiß, Zucker, Vanille und Honig verrühren bis es eine Bindung eingeht und die Nüsse dann einrühren.</li>
<li>In einen Topf leeren, mit einem Gummihund auf der Herdplatte auf mittlerer Flamme abrösten. Hier ist wichtig das wirklich schnell und bis am Boden umgerührt wird. Durch die Hitze fängt der Zucker an zu karamellisieren und die Masse wird dadurch hellbraun. Nicht zu dunkel, zu lange karamellisieren weil die Masse sonst zu hart wird.   </li>
<li>Die Form mit Folie auslegen, den Boden mit Oblate auslegen, die Nussmasse darauf verstreichen, gleichmäßig mit Oblate abdecken und mit Folie abdecken. Über Nacht beschweren.</li>
<li>Am Nächsten Tag herausnehmen aus der Form, der Länge nach fingerdicke Streifen herausschneiden und diese in gleichmäßige Stücke einteilen.</li>
<li>In flüssiger Schokolade glasieren und mit ganzen Walnußkerne die etwas zerbrochen werden, dekorieren.</li>

<li>Backrohr auf 190 °C vorheizen. Aus den Zutaten einen Mürbteig herstellen, zu einem Ziegel formen und in Folie einpacken kühl rasten lassen. </li>
<li>Den Teig auf ca. 2 mm ausrollen und mit einem Ausstecker (3,5) Scheiben ausstechen und aufs Blech legen. Bei der Hälfte der Kekse wird mit einem Kochlöffelstiel eine Vertiefung eingedrückt und für ca. 12 Minuten gebacken. </li>
<li>Marmelade aufkochen und die kalten Kekse mit der Vertiefung damit auffüllen. Die Scheiben ohne Vertiefung mit Marmelade bestreichen und einen Deckel mit Vertiefung darauf kleben. Normalerweise wird die Vertiefung mit einer kandierten Kirsche ausgelegt. Dadurch das ich sie nicht mag hab ich Marmelade darin eingefüllt. </li>
