<li>Backrohr auf 190 °C vorheizen.</li>
<li>Für den Streusel werden die Flocken fein gerieben und mit den restlichen kalten Zutaten grob verknetet. Es muss kein Mürbteig, kein glatter Teig entstehen es darf zerbröseln und lässt ihn im Kühlschrank rasten.</li>
<li>Für den Boden wird die weiche Butter mit Zucker, Vanille, Salz und Zitrone schaumig geschlagen und die Eier nach und nach eingearbeitet.</li>
<li>Die Birnen entkernen, schälen und in gleichmäßige Würfel schneiden.</li>
<li>Die Flocken werden fein gerieben und mit dem Maizena vermischt. Die Mehlmischung vorsichtig unter die schaumige Masse heben, auf dem Backblech verstreichen wo die Birnen darüber verteilt werden und den kalten Streusel darauf gleichmäßig zerbröseln.</li>
<li>Den Kuchen backen und erst servieren wenn er im Kühlschrank gut durchgekühlt gewesen ist.</li>

<li>Eine beschichtete Pfanne mit etwas Öl auf mittlerer Hitze erwärmen. </li>
<li>Mehlmischung in die Flüssigkeit glatt einrühren und mit einem Esslöffel in die Pfanne Pancakes portionieren. Wirft der Teig blasen ist es an der Zeit den Pancake umzudrehen und auf der anderen Seite fertig zu backen. </li>
<li>Nach belieben mit Ahornsirup oder Honig servieren. </li>

<li>Backrohr auf 200°C Umluft vorheizen.</li>
<li>Ei, Dotter und Vanillezucker cremig schlagen, Eiklar mit Zucker, Maizena und Salz schaumig schlagen und 2 Backblech mit Backpapier vorbereiten.</li>
<li>Dottermasse mit Eiweißmasse vorsichtig vermengen und die Mandel unterheben. Die Masse auf die 2 Blech aufteilen, gleichmäßig verstreichen und für ca. 10 Minuten backen.</li>
<li>Herausnehmen, 1 Minute rasten lassen. Ein Backpapier mit etwas Kristallzucker bestreuen, 1. Fleck umstürzen und Papier abziehen. Mit Marmelade bestreichen, eng einrollen und ganz auskühlen lassen. Mit dem 2. Fleck ebenso verfahren.</li>
<li>Eine Schüssel mit den richtigen Maßen wird mit Klarsichtfolie ausgelegt.</li>
<li>Biskuitrouladen auspacken und Scheiben runterschneiden mit max. 3mm Stärke. Die Form wird eng mit Rouladenscheiben ausgelegt.</li>
<li>Für die Creme wird das Obers cremig geschlagen und beiseite gestellt.</li>
<li>Gelatine im kalten Wasser eingeweicht, Joghurt, Topfen, Zitronenschale und Zucker glatt verrühren. Gelatine ausdrücken und mit dem Erdbeermark leicht erhitzen bis sich Gelatine aufgelöst hat. Etwas Topfenmasse ins Mark einrühren, Erdbeermark in die Topfenmasse einmengen und das geschlagene Obers unterheben.</li>
<li>Von der Creme 1/4 in die Form einfüllen, paar Erdbeerwürfel verteilen und mit Roulade belegen.</li>
<li>Von der restlichen Creme 1/3 in die Form füllen, Erdbeeren bestreuen und Roulade belegen.</li>
<li>Restliche Creme einfüllen, restliche Erdbeeren bestreuen und mit den restlichen Rouladen die Form abschließen und somit auch gleichzeitig den Boden bilden.</li>
<li>Über Nacht kühl stellen und am nächsten Tag erst stürzen und präsentieren.</li>

<li>Für den Vorteig wird der Apfelsaft einmal aufgekocht und auf fingerwärme herabgekühlt. Dann wird die Germ darin aufgelöst, und mit ca. 1/3 vom Mehl zu einem zähflüssigen Teig verarbeitet. Etwas Mehl auf die Oberfläche streuen und zugedeckt an einem warmen Ort aufgehen lassen.</li>
<li>Für die Fülle wird der Rhabarber gewaschen und mit Schale in kleine Stücke geschnitten. Erdbeeren etwas gröber zusammenschneiden und mit den restlichen Zutaten, außer dem Kokosette, vermengen und einmal gut in einem Topf aufkochen lassen. Beiseite stellen.</li>
<li>Bekommt der Vorteig Risse im Mehl, so kann man die restlichen Zutaten dazugeben und einen glatten Teig herstellen. Diesen zu einer Kugel schleifen und abgedeckt nochmals rasten lassen.</li>
<li>Teig auf einer bemehlten Arbeitsfläche auf ca. 55&#215;50 cm ausrollen und mit der Füllung, wo jetzt noch der Kokosette eingerührt wird, bestreichen.</li>
<li>Vorsichtig aber eng den Strudel aufrollen, auf ein Backblech mit Papier umlegen und abgedeckt das letzte Mal rasten lassen.</li>
<li>Ofen auf 170°C vorheizen.</li>
<li>Mit einem extrem scharfen Messer, welches man mit etwas Öl befettet, der Länge nach den Strudel einschneiden und dabei aber aufpassen, dass man nicht zu tief, nicht tiefer als bis zur Hälfte, einschneidet.</li>
<li>Im Rohr für ca. 40 Minuten backen und erkaltet mit Staubzucker aufschneiden.</li>

<li>Masse in einen Dressiersack mit einer kleinen Lochtülle einfüllen. Die Oblaten auf Backblech mit Backpapier vorbereiten. Auf die Oblate die Masse flach, 1 mm zum Oblatenrand, aufdressieren und mit Abstand zueinander auflegen. Masse läuft beim Backen etwas auseinander.</li>

<li>Für den Mürbteig alles Zutaten rasch und kalt zu einem Teig verkneten. Diesen gleichmäßig ausrollen, damit man die Tarteform auslegen kann. Mit einer Gabel stupfen und solange backen bis der Teig leicht golden wird. </li>
<li>Den Rum mit den Gewürzen in einem Topf geben und leicht erwärmen und ziehen lassen. Zwetschken vierteln, hinzufügen und vorsichtig die Zwetschken darin weicher köcheln, beiseite stellen und zugedeckt noch ein paar Minuten den Rum einziehen lassen. </li>
<li>Auf den erkalteten Mürbteig den Powidl verstreichen, die Zwetschken darauf gleichmäßig verteilen und überkühlen lassen. </li>
<li>Die weiche Butter mit allen Zutaten gut zusammen aufschlagen lassen und über die Zwetschken gleichmäßig verteilen. Die Zwetschken sollen nicht mehr zum sehen sein. Im Rohr für ca. 1 Stunde backen lassen. </li>
<li>Torte aus dem Rohr nehmen, nach 30 Minuten aus der Form lösen und über Nacht im Kühlschrank rasten lassen. </li>

<li>Milch leicht erwärmen aber nicht kochen lassen. Den Zucker darin auflösen und die Germ einrühren. Mit 100 g Mehl zu einem dickbreiigen Teig verarbeiten. Mit etwas Mehl bestauben und abgedeckt an einem warmen Ort rasten lassen.</li>
<li>Dotter, Rum, Salz und Vanille schaumig schlagen und das Öl langsam einlaufen lassen.</li>
<li>Hat das Dampfl an der Mehloberfläche Risse bekommen und das Volumen hat sich vergrößert, wird der schaumige Dotter und das restliche Mehl dazu geknetet bis es einen glatten Teig ergibt. Wieder abgedeckt an einem warmen Ort rasten lassen.</li>
<li>Das Volumen hat sich verdoppelt, nochmal zusammenkneten und aus dem Teig 40 g Stücke auswiegen und diese zu glatten Kugeln schleifen. Auf einem gut bemehltem Tuch wegsetzten, leicht anstauben, mit einem weiteren Tuch abdecken und mit einem 2. Blech flachdrücken. Das letzte mal an einem warmen Ort rasten lassen.</li>
<li>Das Öl in einem Topf auf 170°C erhitzen.</li>
<li>Die Krapfen mit der glatten oberen Hautseite zuerst ins Öl einlegen und den Deckel vom Topf darauf und 1 Minute verschlossen halten. Deckel abnehmen und wenn der Krapfen eine schöne Farbe bekommen hat wenden und die 2. Seite schön braun backen lassen.</li>
<li>Auf einem Gitter abtropfen lassen und wenn gewollt, noch heiß in Feinkristallzucker wenden, oder etwas überkühlen lassen und dann mit der gewünschten Fülle befüllen.</li>
<li>Zum servieren mit Staubzucker besieben.</li>

<li>Backrohr auf 180 °C vorheizen.</li>
<li>Cornflakes fein reiben und mit dem flüssigen Kokosfett gut vermengen. Eine Springform mit Backpapier auslegen und den Rand leicht mit Kokosfett einfetten. Cornflakes gleichmäßig am Boden verteilen und andrücken. Fingerhoch einen Tortenrand andrücken und im Kühlschrank bereitstellen. </li>
<li>5 EL Kirschsaft mit Puddingpulver verrühren. Den restlichen Kirschsaft zum Kochen bringen, Puddingmischung einrühren und zum Pudding kochen. Die sauberen Weichsel noch heiß einrühren und auf dem Boden gleichmäßig vorsichtig verteilen. </li>
<li>Mandeln darüber streuen und im Rohr für 1 Stunde backen. </li>
<li>Die Torte muss mindestens 1/2 Tag durchkühlen damit man sie schneiden kann. </li>
<li>Mit einem heißen Messer schneiden und gekühlt serviert. </li>

<li>Leere Marmeladengläser gut auswaschen und ins Backrohr bei 100 °C sterilisieren. </li>
<li>Die Hälfte vom Kristallzucker in einem Topf zum hellen Karamell schmelzen und mit Schnaps ablöschen.</li>
<li>Mit dem Wasser aufgießen, restliche Zutaten wie Nelken, Zimt, Vanillezucker, Zitronensäure, restlicher Zucker und Gelierzucker einrühren und einmal aufkochen lassen. </li>
<li>Kocht der Sud, die entkernten Kirschen einlegen, auf halbe Leistung zurückdrehen und zugedeckt gut durchziehen lassen. Bestenfalls soll es nicht stark kochen weil sonst die Früchte zerkochen. </li>
<li>Die sterilen Gläser aus dem Ofen herausstellen, die weichen aber noch bissfesten Kirsche herausschöpfen und in die Gläser vorsichtig umfüllen. Gläser mit Kirschen so voll füllen das 2 Fingerdick Platz noch bleibt. </li>
<li>Den übrig gebliebenen Sud noch einmal stark aufkochen und heiß über die Kirschen in die Gläser vollfüllen. Mit den Deckel gut verschließen. </li>
<li>Gläser auf den Kopfstellen damit die Flüssigkeit überall hinkommt und die Luftblasen an die Oberfläche steigen. </li>
<li>Sind die Gläser erkaltet, wieder retour drehen und dunkel und kühl lagern. </li>

<li>Backrohr auf 190 °C vorheizen. </li>
<li>Butter und Schokolade vorsichtig schmelzen. </li>
<li>Eiklar mit Zucker, Salz und Vanille cremig schlagen. Die Dotter in die geschmolzene Schoko-Butter einrühren und vorsichtig unter den Eischnee mengen. </li>
<li>Mehl und Haselnüsse unterheben und auf ein Blech verstreichen. </li>
<li>Im Rohr flott backen für ca. 12 Minuten. </li>
<li>Herausnehmen und für 1 Minute stehen lassen. Ein weiteres Backpapier nehmen, dieses mit Zucker bestreuen und die Roulade darauf stürzen. </li>
<li>Papier abziehen, mit Marmelade gut bestreichen und einrollen. </li>
<li>Überkühlt mit kochender Marmelade bepinseln und in Kokosette wänden. </li>
